Recipe of the Week: Puttanesca Pasta! | |
- 500 gms dried spaghetti
- Sauce: 2 T olive oil
- 3 cloves garlic, thinly sliced
- 3 anchovy fillets finely chopped
- 2 T capers
- ½-1 t dried chilli flakes
- 1 t dried oregano
- 2 t tomato paste
- 1 c large black olives
- 2 x 400 gm tins whole cherry tomatoes
- To serve: Parmesan for grating; fresh oregano or flat-leaf parsley

Cook spaghetti until al dente. Drain and toss with little olive oil then cover to keep warm. Heat olive oil in large pan over med heat. Add garlic, anchovies, capers, chilli flakes, oregano and tomato paste. Then add tomatoes and olives. Season. Lower heat and simmer gently for about 10". Add spaghetti and gently toss together then transfer to a large platter.owl then pour over sauce and combine. Top with Parmesan and fresh herbs if using.
