“I’ve been winging for about four years, and I absolutely love it,” said 69 year old Simon McDonald from the Bay of Plenty. “My family and I were in Fiji and saw some people in their late 50s and they were kiting, so I had some lessons and started doing that. My son really got into it. Then we saw wingfoiling on YouTube and thought it looked awesome, so went out and bought some gear, and have regretted it ever since!”

Recipe of the Week: Puttanesca Pasta! | |
- 3 chicken breasts
- S & P
- 2 cloves garlic
- 250g uncooked fettuccine; chopped parsley
- 1/2 c butter
- 1/2 c cream
- 3/4 c parmesan cheese grated

Season chicken breasts with S & P, rub in garlic. place on hot BBQ for 5-7" per side, or until juices run clear. Set aside to rest for 10" before slicing. Once sliced, set aside until ready to toss into fettuccine later. Cook fettuccine in a large pot of boiling water for 12", or until al dente. While boiling prepare Alfredo sauce by melting butter into cream in a separate small pot. Once butter is melted into cream, add parmesan cheese and S & P to season. Mix & stir on low heat. Drain pasta and then place into large, heated serving dish. Add the alfredo sauce & BBQ chicken and toss. Top with fresh chopped parsley. Serve with garlic bread on the side and/or a fresh salad. Easy peasy and sooo yummy!
