Recipe of the Week:
Corn, Green Chilli, Spinach and Cheese Fritters
| |
- 3 eggs
- 250g cottage cheese
- 3 small green chillies, seeds removed and diced
- handful fresh coriander
- 1 t garlic powder
- 1 t salt
- 1 C grated cheese
- 3 C frozen or tinned kerneled corn
- 2 handfuls roughly chopped baby spinach
- ¾ C flour
- ¼ C cornflour
- ½ t BP, oil for frying

Whisk together eggs, cottage cheese, green chillies, coriander, garlic powder and salt. Add generous grind of black pepper. Stir through grated cheese, sweetcorn and baby spinach. In separate bowl mix flour, cornflour and baking powder. Add to corn and spinach mixture Mix until well combined. Heat generous glug of oil in pan over med-high heat. Spoon rounded ¼ C batter into pan. It’s a stiff batter so flatten it with back of spoon. Cook for around 2” each side until golden brown and cooked through. Repeat until all batter is used. Serve with some yoghurt swirled with spicy chutney.
