As we grapple with requests and deadlines, we know readers, clients and the entire industry are also trying to squeeze every last commitment and promise into these final days before Christmas and, hopefully, some well-earned time off. The fisherman, who lives on the main island in New Zealand’s remote Chatham archipelago, had spotted the wooden fragments after heavy rains had washed out a creek. He soon came to realise this was no ordinary driftwood.

Recipe of the Week:
Best Ever Potato Salad Stuf | |
- 1.2kg new potatoes
- HERBY GARLIC MAYO
- 1 egg
- ½ C vege oil
- 1⁄4 t salt
- 2 Tb lemon juice
- 1 t wholegrain mustard
- 1 clove garlic, crushed
- ½ C chopped mixed herbs: parsley, sage, mint, basil;
- TO SERVE:
- 100g sour cream
- 2 T chives
- 30g pinenuts, toasted

Boil new potatoes in large pot of salted water until just cooked. Drain and set aside. Blitz all herby mayo ingredients together with stick mixer until creamy. Chop potatoes into bite sized pieces then pour them into serving bowl. Mix sour cream and herby garlic mayo through potatoes. Sprinkle chopped chives and toasted pine nuts over top. Serve warm or chill in fridge until ready to serve | |
