Recipe of the Week:
Red Wine Chicken Stuf | |
- 150ml red wine
- 100g tomato paste
- 3 sprigs of thyme, leaves picked
- 3 sprigs of marjoram, leaves picked, or 1/2 teaspoon dried;
- 100ml red wine vinegar
- 1 whole chicken cut into 8 pieces
- S & P
- 500g baby potatoes, washed & par boiled & drained
- 3 onions, peeled & cut into quarters
- 6 carrots, peeled & cut into quarters lengthways

Mix red wine, tomato paste, herbs & vinegar. Season chicken pieces with S & P; place in bag with marinade, shake; place in fridge for at least 30". Place the onions, carrots and potatoes in a large baking dish or tray (big enough to fit chicken & vegetables) & pour over 125ml water. Arrange chicken pieces, skin side up, in layer on top of vegetables in dish. Pour rest of the marinade over chicken. Cover with sheet of baking paper or foil and roast in the preheated oven 200C for 30". Remove baking paper/foil & baste chicken. Roast, uncovered, for another 15" or until the skin crisp. Serve immediately. Delicious & Easy! | |
