Recipe of the Week:
Creamy Lemon Chicken - Single Serve Stuf | |
- 125g chicken breast
- 10g butter
- 100ml chicken stock
- 50g mushrooms
- ¼ courgette
- 50ml single cream
- ¼ lemon
- Fresh parsley

Cook the chicken in the butter in a heavy-based fry pan until cooked through. Remove from the pan and set aside. Add the stock to the pan to deglaze it - bring to a simmer and add the mushrooms and zucchini - cook for 5 minutes or so until cooked through and tender. Turn the heat to low, add the cream, lemon zest and parsley - stir through before adding the chicken back in to reheat briefly. Serve with a squeeze of lemon. | |
