Recipe of the Week: Baked Chicken Cordon Bleu
Stuf | |
- 5 chicken breasts; split in 2 (total yield 10 pieces)
- 1 onion, finally chopped
- 3 c fresh bread crumbs
- 3/4 c grated Parmesan
- S & P to taste
- 4 T butter; melted
- 3 T olive oil
- 10 slices deli ham; sliced thinly
- 10 slices Gruyere/Swiss cheese
- basil/parsley to sprinkle

Add parmesan & lightly fried onion to breadcrumbs. Mix melted butter to oil. Pat chicken dry and cut each breast into two pieces. Cover chicken pieces with glad wrap and pound chicken until about 1/4" thick. Lightly season chicken pieces. Place slice of ham & cheese on each chicken piece. Roll chicken and secure with toothpick. Dip in and coat chicken with melted butter/oil. Roll in breadcrumb mix. Place in casserole dish, rest in fridge for 1 hour. Bake in preheated 200C oven for 15-20" minutes. | |
