Sailors from the New Zealand and France teams were rushed to Auckland hospital, after a high-speed collision in race three of the New Zealand SailGP event off Wynyard Point. Recipe of the Week:
Sweet Corn Fritters with Tomato Relish Stuf | |
- Vegetable oil spray
- 2 x 420g cans drained
- 3 spring onions, chopped
- 1 small red capsicum (200g), finely chopped
- 2 eggs, lightly beaten
- ½ c self-raising flour
Quick Tomato Relish - 2 large tomatoes (330-350g) finely chopped
- 1 garlic clove, peeled but whole
- 2 T sugar
- 3 T red wine vinegar.

To make relish, place all ingredients in a small saucepan and bring to the boil. Reduce heat and simmer gently for 12-15 minutes until slightly thickened. Discard garlic clove. To make fritters: heat large non-stick frying pan to medium-high & spray lightly with oil. While pan heating, mix corn, spring onion & red capsicum together & season well with S & P. Add eggs & stir through before adding flour, combining well. Drop ¼ c mix per fritter into frying pan, turning after 2-3". Serve with salad & tomato relish | |
