Recipe of the Week:
Tie on your Muscles Stuf | |
- 1kg fresh mussels, scrubbed and debearded
- 1/3 cup fresh lime juice
- 400g can coconut milk
- 1/3 c dry white wine
- 1 1/2T Thai red curry paste
- 1 1/2 T minced garlic
- 1 T fish sauce
- 1 T white sugar
- 2 C chopped fresh coriander

Combine lime juice, coconut milk, wine, curry paste, garlic, fish sauce and sugar in large pot. Stir to dissolve sugar and curry paste and bring to boil over high heat. Boil for 2" then add mussels. Cover and cook, stirring occasionally, until mussels are opened, 5-8". Remove from heat & discard any unopened mussels. Pour mussels and liquid into a serving dish and toss with coriander. Serve with crusty bread to mop up juice!
