The CYCA has confirmed the postponement of the upcoming Trans-Tasman Yacht Race following a sharp reduction in teams from the event. Following the withdrawal over the last four weeks of nine of the 11 entries for various reasons, including damage sustained in other races this summer, it has been determined that the event is not operationally viable.

Recipe of the Week:
Thai Salmon Cakes with Cucumber and Basil Chilli Mayo - 'easy peasy'!! Stuf | |
- 450g fresh salmon -skin off, pin-boned, cut into cubes
- ¼ t cumin
- ½ t chilli powder
- ¼ t ground coriander
- ½ t brown sugar
- 5 kaffir lime leaves, finely chopped
- ½ " ginger, chopped
- 2 garlic cloves, chopped
- 3T coconut cream
- 2 T fish sauce
- 1 red chilli, chopped
- 3 spring onions, chopped
- 1-1½ C panko breadcrumbs
- ¼ C oil

Basil mayonnaise: ½ c mayonnaise; 2T sweet chilli sauce; 20 basil leaves, chopped;1 Lebanese cucumber, cut in half lengthways and sliced; 1 red chilli, finely diced; 2T chopped coriander; lime wedges, to serve

Place all ingredients except panko and oil into food processor and pulse to combine to a thick paste. Roll heaped teaspoons into balls. Place panko crumbs on a plate and roll the balls in crumb to coat well. Lightly flatten each ball to form a mini patty shape. Heat 1-2 tbsp of oil in a large frypan on medium heat and cook in batches for 1-2 mins each side until golden brown.
Top each cake with a slice of cucumber and dollop of Basil Mayo. Sprinkle over red chilli and serve with lime wedges.
