It is difficult to think of much else this week other than those Anzacs who lost their lives in Gallipoli 100 years ago. The multitudinous historical accounts of the ill-fated campaign at Gallipoli tell of all its famous battles and landmarks and the horrific experiences the soldiers were forced to endure. 'They shall grow not old, as we that are left grow old: Age shall not weary them, nor the years condemn. At the going down of the sun and in the morning. We will remember them'.

Recipe of the Week:
Chicken Spinach and Feta Patties St | |
- 250g packet frozen spinach, thawed
- 650g chicken mince
- 1/3 c dried breadcrumbs
- 50g feta, crumbled
- 1 egg, beaten lightly
- 2 T sweet chilli sauce
- 2 T olive oil
- Salad & extra sweet chilli sauce to serve

Drain spinach on paper towel. Squeeze out excess water. Transfer to large bowl. Add mince, breadcrumbs, feta, egg, sweet chilli sauce and season to taste. Mix well to combine. Shape mixture into 12 even-sized patties (about ¼ cup each).
