The Blue Hole in Dahab, Egypt, is one of the most beautiful dive sites on Earth – and one of the most feared. In 2000, 22-year-old diving instructor Yuri Lipski entered the water alone with a head-mounted camera, one tank of air, and a plan that may have pushed him far beyond recreational limits. Stuffed Kumara St | | - 4 large orange kumara
- ½ onion, finely diced
- 3 cloves garlic minced
- ½ C cheese
- ½ C sour cream
- 1 T fresh parsley, finely diced
- 1 T fresh coriander, finely diced
- 1 t butter
- 2 T fresh chives, finely sliced
| | | | Preheat oven 170C. Place kumara on lined baking tray, poke holes in them and bake for 45". Lightly saute onion and garlic in a medium pan & set aside. When kumara is finished cooking, let it rest until cool enough to handle. Cut off top, scoop out inside flesh & place in bowl. Reserve skins. Mash flesh with fork & stir through onions, garlic, 1 T sour cream, ¼ c of cheese, butter, parsley, coriander & season with S & P. Pile flesh back into scooped-out skins. Place kumara on baking tray & sprinkle over remaining cheese. Turn grill to high & grill kumara until cheese melted. Remove from oven & spoon over remaining sour cream & sprinkle over chives.
