This made interesting debate in the office as we spoke of the many nonsensical statues scattered throughout the country with further comments made regarding those statues that were conspicuous by their absence. 'Who wants to sit around all day with birds pooping on you?', one question was asked. And where is the promised statue of Sir Peter Blake, our nautical icon who gave so much to the marine scene and whose life was so tragically cut short? And what about the many people who do such tremendously good work on an international and local level who 'just get on with it' with no recognition whatsoever?

Divine One-Pot Brownie St | | 170 g Butter 1¾ Cups White Sugar, 1½ t Vanilla Essence ¼ t Fine Salt 3 Eggs 1 C Cocoa Powder ⅓ C Plain White Flour | | | | Preheat oven to 175°C. Grease and line a 23 cm square tin with baking paper. Melt butter in large saucepan over med heat. Remove from heat and whisk in sugar, vanilla, & salt until creamy, at least 2”. Add eggs one at a time, whisking well after each addition until fully combined, thick and glossy. Sift over the cocoa powder & flour & stir until only just combined through; avoid overmixing.
