Recipe of the Week:  


Harissa Grilled Chicken

  • 1/2 C harissa
  • 6 T fresh lemon juice
  • 1 T olive oil, plus more for grill
  • 1 1/2 t ground cumin
  • 1 1/2 t rock salt
  • 1 1/2 t smoked paprika
  • 1 t ground coriander
  • 1kg skinless, boneless chicken thighs
  • 2 T fresh coriander, roughly chopped
  • 1 lemon, cut into wedges

In large bowl, stir harissa, lemon juice, oil, cumin, salt, paprika, and coriander. Pour ⅓ C marinade into another container & set aside. Add chicken to remaining marinade and toss to coat. Cover and refrigerate at least 45” or up to 2 hrs. 
Grill med/high heat. Remove chicken from marinade and grill on high, turning once and brushing with reserved ⅓ cup marinade, until cooked through and an instant-read thermometer inserted into thickest part registers 165°, approx 8 to 10”.  Transfer chicken to plate and sprinkle with coriander. 
Serve with lemon wedges.
