The ocean provides us with food, energy, minerals, drugs and half the oxygen in the atmosphere, and it regulates our climate and weather..... We simply cannot put a value on the oxygen the ocean produces, with the estimate of between 50-80% of the world's oxygen produced by the ocean.
As the figures suggest, our oceans are vital for our very existence. With this in mind, the fact that it is believed that 29% of all sea grasses (vital for oxygen production), 50% of the world's corals and 39% of marine diversity has disappeared in the last 30 years, it's an alarming trend.
Leading scientists have warned that marine life will be irreversibly changed unless CO2 emissions are drastically cut and that the oceans are at parlous risk from the combination of threats related to CO2. And we can see the evidence everyday!

Recipe of the Week:
Home-made Jamaican Chicken

Marinade: - 1 med onion, chopped
- 2 spring onions
- 12 whole allspice
- 2 T fresh ginger, grated
- 2 bay leaves
- 1 T fresh thyme
- 3 cloves garlic
- 2 T soy sauce
- 2 small green chillies
- Juice 2 limes
- 2 T oil
- Water to thin sauce.
Sauce: ¼ c of marinade (above); ½ c tomato sauce; 1 T soy sauce. | | | |
Cut deep gashes in each drumstick and set aside. Combine all marinade ingredients in blender -process 'til smooth. In large bowl, smother drumsticks with the marinade, (save ¼ c for sauce). Leave chicken 30 minutes. Overnight is ideal. Bake in hot oven at 220°C for 30 minutes. Coat again with marinade. Cook until skin is charred. Make sauce by putting the ¼ c reserved marinade in a saucepan with tomato and soy sauces, Boil for 5-7 minutes until thickened. Serve chicken on finely shredded cabbage, with chopped green pepper and sauce on side. | |
