How the world’s largest underwater tunnel is being built

The Fehmarnbelt tunnel, is a record-breaking tunnel being built under the Baltic Sea between Denmark and Germany, which will slash travel times and improve Scandinavia's links with the rest of Europe. Running for 18km (11 miles), the Fehmarnbelt will be the world's longest pre-fabricated road and rail tunnel. It's also a remarkable feat of engineering, that will see segments of the tunnel placed on top of the seafloor and then joined together.

Nothing beats a reminder of why we love this industry

This humpback whale surfaced right alongside one of our Selene Ocean Trawlers off the Queensland Coast recently, close enough to reach out and touch. It's a great reminder of what a Selene is built for: those long, slow-cruising bluewater passages where moments like this happen, far from the crowds, with time to actually enjoy what's around you.
Humpbacks migrate along the Queensland coast roughly June through November.

Bill Dixon’s lifestyle enhancements will keep this yacht relevant for aspiring voyagers in years to come. Recipe of the Week:  


Coconut Fish


Ingredients:

  • Lemongrass 1 stalk 
  • Red chilli 1 (optional) 
  • Red onion ½ 
  • Tomatoes 4 ripe (or 1 can crushed tomatoes) 
  • Coconut milk 1 can 
  • Lemon juice 2-3 T 
  • Fish sauce 2 T 
  • Sugar 1 t
  • Basil leaves ¼ cup roughly chopped
  • White fish fillets 600g (e.g. terakihi, gurnard, snapper etc)

Method:
1. Remove outer leaf & finely chop lemongrass; slice chilli lengthways, scrape out seeds, then finely chop; thinly slice onion; roughly chop tomatoes.

2. Heat large fry-pan on medium heat. Add ¼ C of coconut milk, lemongrass & chilli & fry until liquid evaporates & lemongrass is tender, 2-3 mins. Stir in remaining coconut milk, onion, tomatoes, lemon juice, fish sauce, sugar and basil leaves. Simmer for 5 mins.
3. Pat fish dry with paper towels. Season with salt & pepper. Place whole fish fillets in the coconut sauce & simmer for 4 mins; turn fillets over & cook for further 1 min or until just cooked. Enjoy.
