Hello Sailors
'This week I was approached by a sailor whose brief was clear, precise and explicit. He had been hunting for a boat for some time but without success. A busy gentleman (and a pleasure to deal with), he contacted me asking for assistance.
In fine tuning his requirements I was reminded of our exact brief when we set up Yachtfinders Global 30 years ago. Recipe of the Week:
Greek Lemon Chicken & Potatoes

Ingredients:
- 4-6 Chicken Thigh Cutlets, bone in
- Potatoes, peeled and cut into wedges
- 1 large Brown Onion, sliced
- Olive Oil
- Dried Oregano
- Salt & Pepper
- Fresh Parsley to finish
Blended Lemon Sauce:
- 100ml Olive Oil
- Zest & juice 2 Lemons
- 3 large Garlic Cloves
- 2 cups Stock or Bone Broth
- Honey
- 1t Dijon Mustard
- Salt & Pepper

Method:
Add olive oil, lemon zest, lemon juice, garlic, dijon, honey, stock, salt and pepper to a blender and blend until smooth. Peel and chop potatoes into large chunks. Sauté onion with little olive oil in the pan you’re using until softened. Add potatoes, pour over some of the blended lemon drizzle, season with little more salt and oregano and toss everything together. Sit the chicken thigh cutlets on top, drizzle with little olive oil and the rest of lemon sauce.
Roast uncovered at 180°C fan for 1 hour, until the chicken is golden and crispy and the potatoes are soft and have soaked up all the lemony pan juices.
Remove from the oven and finish with plenty of fresh parsley.
