In 1919, whalers pulled up a 27-ton humpback whale and saw something that should not have been there: two unmistakable legs. What first looked like a sea-monster story became one of the strangest clues in whale evolution, linking modern giants to ancient mammals that once walked on land. Lemon Tart St | | - 4 medium eggs
- ½ c softened butter
- ¾ c sugar
- ½ c pl flour
- 100g ground almonds
- 1 c dessicated coconut
- Zest of 2 lemons
- 1 c lemon juice
- 1 c milk

Preheat oven to 170 C fan bake. Grease a 24 cm flan tin, line with baking paper. Place all ingredients in food processor. Blitz for 1“. Pour into flan tin. Mixture is quite runny but sets beautifully while cooking. Bake 60 minutes.Take care it doesn’t brown too much on top. Let cool.
